In Greece they use a very mild onion in their Greek salads. Anyone know which variety it might be? I have tried most of the usual ones available in England and they are all too strong in flavour.

You're right, traditional Greek salads typically use a milder onion compared to some commonly available varieties in England. Here are the two most likely culprits:

  1. Red Onion: This is the most common onion used in Greek salads. Red onions have a sweeter and milder flavor compared to white or yellow onions. They also add a beautiful pop of color to the salad.

  2. Sweet Onion: Some Greek salad variations might use sweet onions, which have an even sweeter and milder flavor than red onions. Popular sweet onion varieties include Vidalia, Walla Walla, and Maui.

Here's a breakdown to help you decide:

  • Red Onion: Widely available in England, good balance of sweetness and mild onion flavor, adds a vibrant color to the salad.

  • Sweet Onion: Less common in England, exceptionally sweet and mild flavor, might be harder to find but offers the closest taste to what you experienced in Greece.

Additional Tips:

  • Soaking Onions: If you only have access to stronger onions like white or yellow varieties, you can try soaking them in cold water for 10-15 minutes before adding them to the salad. This can help mellow their flavor slightly.

  • Slicing Technique: Thinly slicing the onions helps distribute their flavor more evenly throughout the salad and makes them less overpowering in each bite.

  • Experiment with Different Varieties: If you have access to a wider selection of onions, try experimenting with different sweet onion varieties like Vidalia or Walla Walla to see which one best suits your preference.

By using red onions, sweet onions, or employing these techniques, you can achieve a milder onion flavor in your Greek salad, replicating the slither io taste you experienced in Greece.
