Tried this recipe last night, as I picked another large batch of chillies:

240g T&M Cheyenne chillies sliced

100g T&M Apache chillies sliced

300g caster sugar

300ml cider vinegar

3 tbspn fish sauce

This was more to make a chilli preserve for cooking with as it’s pretty hot 🙂 you might prefer this one Ryanbeee
