Seedlings Query

Hi. New to here, and relatively new to gardening. So, question… when planting a variety of seedlings – tomatoes, cucumbers, etc., planting advice is always start small, then when seedlings are big enough, transfer to larger containers. Why not just plant everything in large pots to begin with, to save having to transplant them? Or am I missing something?
